We work with one of the best Australian milk suppliers — the milk mainly comes from the Smith Family Organic Farm on the Great Ocean Road. The Smiths look after their pastures organically with no pesticides. They don’t feed their Jersey cows any silage, which makes for happy cows and great milk.
Only protected from the wild Great Southern Ocean by a sand dune, the Smith Farm is the epitome of the local Terroir.
This wonderful quality milk allows the L’Artisan team to craft products ranging from the Extravagant Triple Cream to the Mepunga Gruyere.
We use the best Australia has to offer to make Traditional French cheeses following recipes and techniques brought from France by Matthieu.
Everything is done by hand, from skimming to moulding, and every batch, every cheese receives special attention.
Our milk - mainly coming from one farm part of Organic Dairy Farmers of Australia Co-op - is Organic Certified which means the Farmers produce it in an environmentally and socially responsible way through soil regeneration, water conservation and animal welfare.
They promote biodiversity by growing a variety of grass - a great thing for the taste of our cheese - and do not use any synthetic or artificial pesticides, herbicides or GMOs.
This translates into milk with much higher calcium content enabling us to make semi hard and hard cooked cheeses in the best conditions. The quality of the cream is also amazing, a direct consequence of the diversity of the cows feed.
